Sweet Potato Brownies

If you’re trying to make healthier choices when it comes to your diet, but you’ve got a raging sweet tooth like me, I’m about to make your day. Here is the brownie recipe I have on repeat at home. The sweet potato adds texture and sweetness alongside beta carotene, vitamin C, potassium and fibre. And of course, since I’m always looking for sneaky ways to add more protein to my diet, I include two scoops of high quality grass fed whey or beef protein powder. I love this recipe. Jason loves this recipe. And the good news, Levi likes it, too.

Sweet Potato Brownies

Ingredients
1.5 cups cooked, mashed sweet potato
1/2 cup almond (or seed) butter
1/4 cup almond flour
1/4 cup real maple syrup
1/4 cup cacao powder
2 scoops (approximately 1/4 cup per scoop) of vanilla or chocolate protein powder (I use one of each)
1 tbsp oil (I use olive oil)
1 tsp vanilla extract
1/4 tsp baking powder
1/4 tsp baking soda
pinch of sea salt
1/2 cup of chocolate chips plus a handful to sprinkle on top

Instructions
1. Preheat oven to 350 F
2. Line an 8×8 baking pan with parchment paper
3. In a large bowl, mix all ingredients except for the chocolate chips
4. Fold in the 1/2 cup of chocolate chips
5. Pour into the parchment lined baking pan and spread out evenly
6. Top with remaining chocolate chips
7. Bake for 30 minutes
8. Remove from oven and let sit to cool
9. Cut into pieces and store in the refrigerator

These brownies will firm up a little more in the fridge. And personally, I like them best after they’ve been refrigerated for a day or so.
